Step preview

  1. Add butternut squash, parsnip, celeriac, ground cumin, ginger purée and vegetable stock to a clean large saucepan
  2. Boil
  3. Reduce the heat, cover and simmer until tender - 15 min, medium heat
  4. Blend with stick blender until smooth
  5. Season with salt & pepper
  6. Ladle soup into 4 small bowls
  7. Add crème fraîche to the small bowls and garnish with fresh parsley
  8. Serve immediately
