A spicy one-pot wonder flavored with fresh, sweet Basque-inspired flavours. Seasoned chicken pieces are simmered in a rich white wine and tomato sauce. This warming stew is comfort food in a bowl. You can use thighs, drumsticks, or any other bone-in pieces according to your preference. Serve with plenty of crusty bread to mop up the sauce.

Step preview

  1. Add all purpose flour to a clean medium bowl
  2. Season with salt & pepper
  3. Coat chicken pieces with the flour mixture
  4. Add olive oil to a clean medium cast iron skillet
  5. Transfer chicken to medium cast iron skillet
  6. Fry each side until golden brown - high heat
  7. Transfer chicken to work surface then set aside
  8. Add onion, red bell pepper and green bell pepper to the medium cast iron skillet
  9. Fry until softened while stirring occasionally - approx 5 min, medium heat
  10. Add garlic clove, paprika, smoked paprika and prosciutto
  11. Fry - approx 2 min
  12. Return chicken to your skillet
  13. Add marsala, white wine, water, canned chopped tomatoes and dried thyme
  14. Season with salt & pepper to taste
  15. Heat until bubbles form and cover
  16. Simmer - approx 30 min, low heat
  17. Serve the chicken in bowls with lots of sauce
