A homemade version of a fast food classic. Cajun seasoning or smoked paprika will give this simple chicken dish a spicy kick, and buttermilk makes the chicken moist and the coating crunchy and satisfying. This recipe would make perfect party food, or serve with fries and corn the cob for dinner.

- All purpose flour
- 50 g

- 2 ½ teaspoons

- 1 tablespoon

- 1 tablespoon

- 1 tablespoon

Step preview
- Add sunflower oil to a clean saucepan
- Heat to 180°C
- Add egg white, buttermilk and smoked paprika to a clean small bowl
- Beat lightly
- Season with salt & pepper to taste
- Dip chicken breast into the wet ingredients
- Add all purpose flour, salt, dried oregano, paprika, cayenne pepper and black pepper to a clean medium bowl
- Dip chicken in dry ingredients
- Transfer chicken to saucepan
- Fry until golden brown - 3 min, 180°C
- Remove with slotted spoon
- Pat dry with paper towels
- Add mayonnaise and fresh chives to a clean small bowl
- Mix with tablespoon until well combined
- Transfer chicken to serving plate
- Drizzle with sauce
- Serve immediately
