A delicious little tapas bite or go the full hog (well, cow I guess) and have them for dinner. Easy in the extreme and completely delicious! Use wraps, pitas, or your flat bread of choice per serving.

Step preview

  1. Add cherry tomatoes, fresh parsley, baby spinach, red onion and feta cheese to a clean large mixing bowl
  2. Toss until well combined then set aside
  3. Add fennel seeds and fresh rosemary to the TM bowl
  4. Blend with MC in place - 8 sec, speed 10
  5. Add fresh parsley, mint leaves, scallion and ground cumin
  6. Chop with MC in place - 5 sec, speed 7
  7. Then add beef filet, breadcrumbs and honey
  8. Season to taste
  9. Add egg and salt
  10. Blend with MC in place - 30 sec, speed 8
  11. Scrape down sides of TM5 bowl
  12. Heat a grill or fry pan to smoking point
  13. Add a drizzle od oil
  14. With damp hands, form 'rissoles' and flatten slightly
  15. Fry until well done and turn
  16. Meanwhile, prepare each wrap by flame grilling on the actual flame of a gas burner until you have a char grilled look with burnt edges....or to taste
  17. Place onto each serving plate and spread with yoghurt
  18. Top with salad and feta cheese
  19. Top each prepared plate with 2-3 Koftas
  20. Drizzle with extra virgin olive oil
  21. Garnish with fresh lemon juice to taste
