Frittata is super fun to say out loud. It's very similar to quiche, but a little healthier (no crust and less cheese) and way faster to make than quiche as well. It's the perfect breakfast dish to make for a group!

Step preview

  1. Pre-heat oven - 230°C
  2. Add egg and heavy cream to a clean large mixing bowl
  3. Whisk together and set aside
  4. Add green bell pepper and summer squash to a clean medium bowl
  5. Sauté vegetables in large cast iron skillet until just cooked
  6. Add garlic clove and olive oil to the large cast iron skillet
  7. Transfer eggs to large cast iron skillet
  8. Season with cayenne pepper lightly
  9. Stir gently and heat until halfway done
  10. Bake - 3 min, 230°C
  11. Sprinkle with parmesan cheese
  12. Serve
