Dried mushrooms

Water

Step preview

Add duck breast to a clean work surface
Season with chinese five spice
Pre-heat - high heat
Transfer meat to frying pan
Fry skin side down in frying pan until browned
Turn
Add lemongrass stalk, garlic clove, shallot, dried shiitake mushrooms, ginger and chicken stock to the frying pan
Simmer in frying pan to simmer - 1 hr 30 min, low heat
Remove
Add goji berries, dried mushrooms and fish sauce to the frying pan
Season with salt & pepper to taste
Boil in frying pan until thickened while stirring occasionally
Return
Add cornflour and water to a clean small bowl
Mix with teaspoon until thick
Transfer mixture to frying pan
Simmer in frying pan - 30 min, low heat
Add scallion to the frying pan
Garnish with cilantro
