Step preview

  1. Heat olive oil to a clean frying pan
  2. Add asparagus and fry gently for 5 min, then set aside on a plate
  3. Add olive oil, baby potato and onion to the frying pan
  4. Cook gently in frying pan until tender - 15 min
  5. Add egg, fresh basil leaves and salt & pepper to a clean medium bowl
  6. Beat until well combined
  7. Transfer asparagus back to the pan and mix evenly
  8. Pour the egg mixture and reduce heat to low
  9. Cover with foil
  10. Cook for about 10 minutes until almost set but still a little wobbly in centre
  11. Flip
  12. Cook frying pan until firm - 3 min
  13. Serve
