- Canned chopped tomatoes
- 200 g

- Chicken stock
- 300 ml

- Flour tortilla
- 25 g

- Blanched almonds
- 40 g

- Sesame seeds

Step preview
- Pre-heat oven - 180°C
- Add vegetable oil to a clean Dutch oven
- Heat - high heat
- Add whole chicken to the Dutch oven
- Sear evenly until light golden - high heat
- Transfer content of Dutch oven to plate then set aside
- Add onion and green bell pepper to the Dutch oven
- Fry gently until softened - 4 min
- Add allspice, ground cinnamon, ground cumin, chili powder and garlic clove to the Dutch oven
- Fry while stirring occasionally - approx 1 min
- Add canned chopped tomatoes and chicken stock to the Dutch oven
- Heat until boiling
- Transfer chicken to Dutch oven and cover
- Bake - 45 min, 180°C
- Add flour tortilla, blanched almonds and sesame seeds to a clean food processor bowl
- Blend until fine
- Pour chicken stock into the mixture
- Blend until smooth
- Transfer mixture to Dutch oven
- Add dark chocolate to the Dutch oven
- Stir
- Bake until tender - 30 min, 180°C
- Season with salt & pepper to taste
- Garnish with cilantro
- Serve
