- Feta cheese

Step preview
- Heat a clean frying pan - high heat
- Add cumin seeds and coriander seeds to the frying pan
- Toast in frying pan until fragrant
- Add sea salt, garlic clove, red onion, fresh chili, chorizo, ground chicken and red bell pepper to the frying pan
- Fry in frying pan until just cooked while stirring occasionally - low heat
- Transfer content of frying pan to medium bowl
- Add ear of corn to a clean baking sheet
- Grill in broiler until browned and let cool
- Once cool, slice kernels off and set aside.
- Pre-heat frying pan - medium heat
- Add flour tortilla and cheddar cheese to a clean work surface
- Crush feta cheese the tortillas
- Add parmesan cheese to the tortillas
- Drizzle with extra virgin olive oil
- Transfer tortillas to frying pan
- Cook one by one in frying pan - approx 3 min
- Slice into quarters
- Add avocado, lime and salt & pepper to a clean small bowl
- Mash until combined
- Serve
