Step preview

  1. Mix spices in a clean small bowl with teaspoon
  2. Rub the spices into the cubes of chicken
  3. Let rest - 30 min
  4. Bruise the lemon grass with the side of a rolling pin to release the flavour
  5. Add peanuts to a clean food processor bowl
  6. Crush until fine and transfer to a small bowl
  7. Heat a clean frying pan
  8. Add long grain rice to the frying pan
  9. Toast in frying pan until golden brown
  10. Transfer toasted rice to a food processor bowl
  11. Crush until fine
  12. Heat vegetable oil in the frying pan
  13. Add onion and fry until softened
  14. Transfer chicken to frying pan
  15. Add garlic clove, ginger, paprika and fresh chili
  16. Transfer lemongrass to frying pan
  17. Add fish sauce and water
  18. Boil in frying pan to simmer
  19. Transfer content of food processor bowl to small bowl
  20. Mix
  21. Transfer content of small bowl to frying pan
  22. Simmer in frying pan until cooked through - approx 15 min
  23. Stir noodles into the frying pan
  24. Heat in frying pan - 1 min
  25. Garnish with egg, cilantro and green onion
