Step preview

  1. Boil salted water in a clean saucepan
  2. Add tagliatelle
  3. Cook until al dente
  4. Add olive oil, garlic clove and shallot to a clean saucepan
  5. Cook while stirring occasionally - 3 min, medium heat - then set aside
  6. Add peas, fresh broad beans, asparagus and spinach to a clean saucepan
  7. Cook while stirring occasionally - 2 min, medium heat
  8. Add heavy cream to the vegetables
  9. Simmer - 3 min, medium heat
  10. Drain
  11. Transfer pasta to vegetables
  12. Season with salt & pepper generously
  13. Add parmesan cheese and mint leaves to the vegetables
  14. Toss with slotted spoon
  15. Serve immediately
