Serve these tasty, citrusy chicken skewers with rice or sweet potato wedges. The marinade also works perfectly for larger chicken pieces or boneless breasts. Don't be afraid of a hot grill to get a nice char on the chicken!

Step preview

  1. Add orange zest, orange juice, lime zest, lime juice, fresh chili, sunflower oil, garlic clove, muscovado sugar and cumin seeds to a clean glass baking dish
  2. Mix and add chicken breast
  3. Cover the container with clingfilm when tossed
  4. Chill in fridge - 2 hr
  5. Pre-heat Grill and thread the chicken on to 8 wooden or thin metal skewers
  6. Cook until cooked through then set aside
  7. Transfer chicken to serving plate, garnish with lemon and cilantro and serve
