Meaty tuna steaks take on the sweet, zesty flavors of this glaze. Tuna is best served a little pink, so it will cook very quickly.

Step preview

  1. Pre-heat in broiler - high heat
  2. Add honey, wholegrain mustard, tomato purée, orange juice, red wine vinegar and black pepper to a clean saucepan
  3. Heat until boiling
  4. Reduce the heat and simmer glaze until thickened
  5. Add parsnip and potato to the separate saucepan and boil until tender
  6. Add greek yogurt and black pepper to a clean food processor bowl
  7. Add cooked potato and parsley and blend briefly until smooth
  8. Add tuna steak to a clean baking sheet and brush with olive oil
  9. Broil in broiler - 2 min, high heat
  10. Scoop glaze onto fish
  11. Broil in broiler - 2 min, high heat
  12. Spread some of the purée out below each tuna steak and serve
