Step preview

  1. Add potato to a clean saucepan
  2. Cover with water
  3. Bring to a boil
  4. Simmer until cooked through - 20 min
  5. Drain potatoes
  6. Peel
  7. Mash
  8. Transfer potatoes to large mixing bowl
  9. Add nutmeg to the dough
  10. Sift cake flour into the dough
  11. Season with salt & pepper
  12. Add egg to the dough
  13. Mix a clean work surface quickly until small clumps form
  14. Knead gently until smooth
  15. Transfer dough to work surface
  16. Divide into thirds with dough scraper
  17. Roll
  18. Cut
  19. Add water to the large saucepan
  20. Transfer dough balls to baking sheet
  21. Add salt to the large saucepan
  22. Boil the water
  23. Transfer dough balls to large saucepan
  24. Cook - approx 4 min
  25. Remove with slotted spoon
  26. Serve immediately
