Step preview

  1. Heat butter and sunflower oil on a clean medium cast iron skillet over medium high heat
  2. Add chicken thighs and fry until browned
  3. Transfer browned chicken to slow cooker bowl
  4. Add bacon and leek to the medium cast iron skillet
  5. Fry until light golden - 5 min
  6. Stir in all purpose flour to the medium cast iron skillet
  7. Gradually mix in chicken stock, wholegrain mustard and salt & pepper to the medium cast iron skillet
  8. Bring to boil and stir to prevent lumps
  9. Pour bacon mixture into slow cooker bowl and cover
  10. Cook until tender - 10 hr, low heat
  11. Add the green sliced leeks and stir into the sauce, then replace the lid
  12. Cook in slow cooker until softened - 15 min, low heat
  13. Spoon into shallow serving bowls and serve with mashed potato
