- 120 ml

- Dijon mustard
- 1 teaspoon

- Balsamic vinegar
- 2 tablespoons

- 3 sprigs

- Crème fraîche
- 3 tablespoons

- Add parsnip, potato, salt and water to a clean large saucepan
- Cook until tender - 15 min
- Add olive oil to a clean large cast iron skillet
- Heat
- Add onion to the large cast iron skillet
- Cook until softened - 3 min
- Add lamb chop to the large cast iron skillet
- Season
- Cook evenly until browned
- Transfer content of large cast iron skillet to plate then set aside
- Add red wine, dijon mustard, balsamic vinegar and rosemary to the large cast iron skillet
- Boil
- Simmer until thickened
- Transfer meat to large cast iron skillet
- Heat until heated through
- Drain vegetables
- Add crème fraîche and black pepper to the vegetables
- Mash with potato masher
- Serve
