- Sunflower oil
- 2 tablespoons

- Mustard seeds
- 2 teaspoons

- Ground turmeric
- 1 teaspoon

- Ground coriander
- 2 teaspoons

- Curry powder
- 2 tablespoons

- Water
- 240 ml

- Salt & pepper
- as needed

- Plain yogurt
- 6 tablespoons

Large cast iron skillet

Step preview
- Add sunflower oil to a clean large cast iron skillet
- Heat
- Add onion to the large cast iron skillet
- Fry until softened while stirring occasionally - approx 5 min, medium heat
- Add garlic and mustard seeds to a clean small bowl
- Grind with mortar and pestle
- Transfer content of small bowl to large cast iron skillet
- Fry while stirring occasionally - 1 min
- Add ground turmeric, ground coriander and curry powder to the large cast iron skillet
- Fry while stirring occasionally - 3 min
- Add chicken thigh to the large cast iron skillet
- Fry while stirring occasionally - 5 min, high heat
- Add water and salt & pepper to the large cast iron skillet
- Boil and cover
- Reduce heat
- Cook gently until cooked through and turn off heat - 25 min
- Add plain yogurt to the large cast iron skillet and mix
- Serve immediately
- Garnish with cilantro
