Step preview

  1. Place canned cannellini beans and scallion on a clean slow cooker bowl
  2. Mix in fish stock, wholegrain mustard, lemon and salt & pepper to a clean medium bowl, then pour over beans in the slow cooker bowl
  3. Arrange cod fillet in the slow cooker bowl
  4. Sprinkle with black pepper and cover
  5. Cook in slow cooker - 2 hr, low heat
  6. Lift out the fish with a spatula and transfer to a plate
  7. Pour off nearly all the cooking liquid, then mash the beans roughly
  8. Stir in sour cream, scallion and arugula to the slow cooker bowl
  9. Season and spoon the mash on to plates and top with the fish
