Step preview

  1. Pour white wine vinegar into a clean slow cooker bowl
  2. Add rosemary and fresh thyme to the vinegar mixture
  3. Pour superfine sugar into the vinegar mixture
  4. Add bay leaves, lavender, garlic clove, salt and black peppercorns to the vinegar mixture
  5. Cover
  6. Cook in slow cooker while stirring occasionally - 2 hr 30 min, high heat
  7. Pre-heat oven - 160°C
  8. Heat 3 clean jars in the oven until sterile
  9. Add plum to the jars carefully
  10. Add rosemary and fresh thyme to the jars
  11. Strain vinegar mixture into 3 jars evenly
  12. Seal tightly
  13. Let cool
  14. Store
