Step preview

  1. Add olive oil, butternut squash, sweet potato and vegetable stock to a clean large saucepan
  2. Heat while stirring occasionally - 10 min, medium heat
  3. Boil, then reduce to low and simmer for 8 min
  4. Add parmesan cheese and boil for another 2 min
  5. Season with black pepper
  6. Transfer soup to blender jug
  7. Blend until smooth - approx 2 min
  8. Serve
