Make your own marzipan quickly and easily with this recipe. Use the raw marzipan to decorate a cake, or cut into shapes and bake for marzipan cookies. More The unbaked mixture is 'raw' marzipan and can be used to make tiny marzipan fruits or to decorate a cake. Blanch the almonds yourself in your Thermomix by covering them with water in the TM bowl and heating 4 min/Varoma/Reverse/speed 1.

Step preview

  1. Pre-heat oven - 160°C
  2. Add golden caster sugar to the TM5 bowl
  3. Blitz with MC in place 10 sec, speed 9
  4. Set aside
  5. Add blanched almonds to the TM5 bowl
  6. Blitz with MC in place 15 sec, speed 7
  7. Then add almond extract, cornflour, egg white and milled sugar to the TM5 bowl
  8. Mix with the aid of the spatula 40 sec, speed 5
  9. Scrape down sides of TM5 bowl
  10. Roll the mixture onto a silicone mat or piece of baking paper that is dusted in cornflour
  11. Cut into star shapes with a cookie cutter
  12. Line a clean baking sheet with parchment paper
  13. Place on a lined baking tray or on top of mince tarts
  14. Bake for approximately 10-13 minutes or until lightly golden
  15. Serve
