This is one of my husband's favorite desserts. I made him this for Valentine's Day when we first started dating, with fresh strawberries and strawberry fluid gel. It was love at first bite!

Step preview

  1. Fill a clean large mixing bowl with ice water
  2. Bloom silver leaf gelatin sheet the large mixing bowl until softened then set aside
  3. Add heavy cream, granulated sugar and vanilla bean to a clean saucepan
  4. Heat until boiling and turn off heat
  5. Transfer gelatin to mixture and whisk until dissolved
  6. Whisk buttermilk into mixture
  7. Strain with sieve
  8. Divide evenly between 8 ramekins
  9. Chill mixture in fridge until set - approx 6 hr
  10. Decorate
