Step preview

  1. Add avocado, canned corn and cherry tomatoes to a clean medium bowl
  2. Give everything a good squeeze of lime and stir until combined
  3. Heat the olive oil in a frying pan over medium to high heat
  4. Add the garlic and mushrooms and cook for 5 minutes, stirring occasionally
  5. Add the black beans and cook for another minute
  6. Then stir the cumin through until all the ingredients are well coated
  7. Remove from heat
  8. Heat the tortillas in the microwave according to packet directions
  9. To serve, fill each tortilla with an even amount of the mushroom and black bean mixture and then top with the tomatoes, corn and avocado
  10. Finish by garnishing each taco with coriander leaves
