These low-carb muffins are delicious for a grab-and-go breakfast or lunchbox snack. Feel free to substitute silverbeet with baby spinach or kale. If your muffin trays are large (or the eggs are small) you may add an extra egg or 2 to fill them.

Step preview

  1. Pre-heat oven - 180°C
  2. Add red onion to the TM5 bowl
  3. Chop with MC in place 2 sec, speed 6
  4. Scrape down sides of TM5 bowl
  5. Add chard and rice bran oil to the TM5 bowl
  6. Sauté until wilted - approx 3 min, 100°C, reverse gentle stir
  7. Transfer contents of TM5 bowl to simmering basket
  8. Let drain for a few minutes. Continue without washing TM bowl
  9. Add egg, baking powder, salt, black pepper, fresh basil leaves and scallion to the TM5 bowl
  10. Mix for 15 sec, speed 4
  11. Grease a clean muffin pan
  12. Transfer contents of simmering basket to muffin pan
  13. Add goat cheese to the muffin pan
  14. Pour egg mixture into muffin pan
  15. Bake - 25 min, 180°C
