What’s not to love about a cake that’s made from luscious dates and is moist, soft and so easy to make! It was so good that I am going to let the recipe do all the talking... really and also maybe because my mouth is stuffed with the last piece of this cake. I fell in love with this cake the minute I popped it out of the oven. It was perfect! The date cake had baked beautifully and it had absolutely no cracks – all I did was dust it with some confectioners sugar and that’s it.

Step preview

  1. Pre-heat oven - 175°C
  2. Grease a clean square pan with cooking spray or butter
  3. Add water to a clean saucepan
  4. Heat until boiling
  5. Add dates to the saucepan
  6. Cook - 5 min, medium heat
  7. Add baking soda to the saucepan and continue mixing
  8. Switch off the heat
  9. Set aside - 15 min
  10. Grind into a fine paste then set aside
  11. Add unsalted butter and granulated sugar to the stand mixer bowl
  12. Cream until light and fluffy - medium speed
  13. Add egg and vanilla extract to the stand mixer bowl
  14. Beat until combined
  15. Add all purpose flour, whole wheat flour, salt and baking powder
  16. Transfer the pureed date mixture to the stand mixer bowl
  17. Mix until combined
  18. Pour the batter into the greased pan
  19. Bake until skewer tests clean - 35 min, 175°C
  20. Remove from the oven
  21. Let cool completely in the pan
  22. Dust with powdered sugar
  23. Serve
