This elevated french toast is composed of thick challah slices, generous schmears of peanut butter, tons of bananas, and a drizzle of honey. The bread is flavored with vanilla, nutmeg, and rum - feel free to leave out the rum if you're making it for kids!

Step preview

  1. Spread each slice of bread with about a tablespoon of peanut butter (or more)
  2. Top two of the slices with the bananas, then drizzle with honey
  3. Stack the slices together to form two sandwiches
  4. Whisk together the eggs, cream, vanilla, nutmeg, rum, and salt in a shallow bowl
  5. Add butter to a clean medium cast iron skillet
  6. Heat a large skillet over medium-high heat
  7. Grease with butter or cooking spray
  8. Soak all sides of the sandwiches in the egg mixture, then place on the griddle or skillet
  9. Cook 3-4 minutes on each side, or until golden brown
  10. Remove to a cutting board and halve diagonally
  11. Serve with sifted powdered sugar and warm syrup
