These vegan friendly energy balls are a perfect snack when you're on the go. For best results, store in the freezer but they can be kept in the fridge.

Step preview

  1. Add dates and water to a clean medium bowl
  2. Soak - approx 5 min
  3. Drain content of medium bowl into colander
  4. Fit kCook bowl to kCook Multi
  5. Transfer content of colander to kCook bowl
  6. Fit max blade to kCook bowl
  7. Add cashew nuts, chia seeds, coconut oil, cashew butter, maple syrup and ground cinnamon to the mixture
  8. Attach lid to kCook bowl with filler cap fitted
  9. Blend with filler cap fitted - 1 min, speed 12
  10. Then add oats and water to the mixture
  11. Blend with filler cap fitted - 30 sec, speed 7
  12. Line a clean baking sheet with parchment paper
  13. Roll mixture into balls
  14. Transfer mixture to baking sheet
  15. Freeze - approx 1 hr
  16. Serve
